Understanding Altitude Adjustments in Home Canning

Home food preservation is a science governed by thermodynamics and microbiology. When pressure canning low-acid foods (such as vegetables, meats, poultry, seafood, and soups), the primary goal is destroying spores of Clostridium botulinum. These spores produce lethal botulinum neurotoxin under anaerobic, low-acid conditions.

At sea level, plain water boils at 212°F (100°C). However, boiling water at 212°F is insufficient to kill C. botulinum spores within a reasonable timeframe. Thermal death time studies conducted by the USDA and National Center for Home Food Preservation (NCHFP) confirm that food must reach an internal steam temperature of 240°F (116°C).

As elevation increases above sea level, atmospheric pressure drops (roughly 1 inch of mercury per 1,000 feet). Because lower atmospheric pressure exerts less force on the surface of liquid, water boils at a lower temperature—approximately 1°F lower for every 500 feet of elevation.

For example, in Denver, Colorado (elevation 5,280 ft), water boils at just 201.4°F (94.1°C). Without pressure canning, a boiling water bath can never reach 240°F regardless of how long or hard it boils.

USDA Pressure Canning Guidelines: Weighted vs. Dial Gauges

Because pressure canners create steam pressure above atmospheric level, they raise the internal boiling point of water to 240°F or higher. However, because baseline atmospheric pressure is lower at altitude, the gauge pressure registered inside the vessel must be increased to achieve 240°F.

⚖️ Weighted Gauge Canners

Weighted gauge canners use a machined weight (regulator) resting over a vent pipe. Weights typically come in three calibrated pieces: 5 lb, 10 lb, and 15 lb.

  • 0 – 1,000 ft elevation: Process at 10 PSI (10 lb weight ring).
  • Above 1,000 ft elevation: Process at 15 PSI (15 lb weight ring).

Why the jump to 15 lb? Weighted regulators do not allow incremental +1 PSI adjustments. Therefore, the USDA FSIS standard specifies shifting from the 10 lb weight directly to the 15 lb weight anywhere above 1,000 feet.

Dial gauge canners feature an analog bourdon-tube pressure gauge that displays continuous PSI readings. Because dial gauges allow precise reading, pressure is adjusted in 1 PSI increments for every 2,000 feet of elevation.

Boiling Water Bath Elevation Adjustments

High-acid foods (pH 4.6 or lower, such as fruits, jams, jellies, pickles, and acidified tomatoes) are safely processed in a boiling water bath because high acidity inhibits C. botulinum growth. However, because water boils below 212°F at elevation, processing times must be extended so heat fully penetrates to the center of the jar.

Step-by-Step USDA Safe Canning Protocol

  1. Venting Steam (Crucial First Step): Before placing the weight or pressure regulator on the vent pipe, allow steam to escape in a steady stream for 10 full minutes. This purges trapped air pockets from the canner, ensuring the atmosphere inside is 100% pure saturated steam.
  2. Reaching Pressure: Place the weight or close the petcock. Watch for the weighted gauge to jiggle gently (1–4 times per minute for Presto/Mirro, or steady rock per manufacturer spec) or for the dial gauge to reach your calculated target elevation PSI.
  3. Timing & Heat Control: Start processing time ONLY when target pressure is reached. Adjust stove burner heat to maintain steady pressure. If pressure drops below target for even one second, you must bring it back to target and restart processing time from zero per USDA safety rules.
  4. Natural Depressurization: When timing completes, turn off heat and let the canner cool naturally until pressure drops to 0 PSI. Never force-cool a canner with cold water or lift the weight early; rapid pressure loss causes siphoning (liquid boiling out of jars) and seal failure.

Frequently Asked Questions

Can I use a weighted gauge on a dial gauge canner?

Yes, if your canner model supports a weighted regulator conversion (such as Presto 3-piece weight set #06833). Using a weighted gauge eliminates the need for annual dial gauge testing because calibrated weights do not go out of calibration.

What happens if I forget to adjust for altitude?

Under-processing canned food leaves dangerous bacterial spores alive. In low-acid foods, these spores produce botulinum toxin which is odorless, tasteless, and potentially fatal. Always adjust PSI or processing time for your exact elevation.

Is electric pressure cooker canning safe?

No. Small electric pressure cookers (Instant Pot, etc.) do not hold thermal mass or guarantee sustained 240°F internal steam temperatures throughout the jar, regardless of elevation settings. The USDA does not recommend electric pressure cookers for home canning.
